Simple stuff today.

Breakfast was on the stovetop/one skillet. I really need to buy another skillet. hashbrowns, ham "steak," and scrambled eggs

Dinner tonight was nachos...skillet for taco meat/microwave for refried beans/cheese sauce.

I haven't been too adventurous lately. I have been making nachos and pan (crustless) pizza lately. I'm trying not to make too much of a mess until I'm at the campground with hookups.

Oh, I forgot, last week, I made a lasagna (keto/low carb). It was good. I froze the extras for when I don't feel like cooking. I'm trying to crawl back on the "keto wagon" but the damn thing keeps moving. Plus, my daughter, BLESS HER HEART, sent me cookies today. My. Favorite. Cookies. /sigh

Mom used to do that to me ,a never ending stream of it , cookies , brownies , home made candies her version of chex mix .
Whenever I was there , there would always be something to munch on AND a box of it to take back out on the road with me ,,annnnd I always did !

Now they don't allow her to cook except for her microwave ....which is unplugged and she doesn't know how to plug it in anymore....................SOOOOO WHAT KIND OF COOKIES ????????????????

Oh , and I jammed a quarter pound of fresh crabmeat down when I took a break from the v2.7497 upgrade I'm doing ...annnd I used some mayo..
so I made it.

My mom was butter tarts and Chex mix with cashews and macadamia nuts and pretzels. So good soaked in butter. Lol. I come by my pork honestly. My mom still can cook, lives in her own. Putting in a care facility would have been smart five years ago but now...it would kill her I afraid. She has her routine. Coffee and eggs on toast in the morning afternoon sandwich and evening usually what my sister shows up with or prepares. She doesn’t eat much anymore, could be an extra in a concentration camp movie. But...it is what it is. Life is freedom and freedom to choose. She misses my Dad.

White Chocolate Macadamia Nut cookies... I ate one last night. After a perfectly low carb day. LOL I did stop with one, but dang. I've been encouraging my grandson to eat them, but he's a pretty light eater. Unless it's popcorn, then he can demolish a whole bag.

We used to have popcorn eating contests when I was a in HS ,,to see who could eat a 10 cent bag the fastest.
That was a BIG BAG back then too. They had 5 cent bags too but we all could eat one of those before reaching "critical mass popcorn overload " which was the beginning of the real part of the contest . We always held the contests in the park off Maine Street in the middle of town so the pigeons and squirrels could entertain us eating the drops and leftovers,,,,there were always leftovers.....
I never won IIRC.
