What did you cook in your vehicle (van, RV, etc) today?

Can we do this? Sometimes I need a boost to figure out what I can put together meal wise in my limited space. I do have an oven, stove top, micro, and a foodi (air frying/instant pot device).

Here's what i cooked today:

Biscuits in oven that didn't really rise (too long in freezer I'm guessing) and a breakfast scramble thing (dehydrated hashbrowns, eggs, cheese) on the stove top.

Crustless pizza in the oven.

I'm really trying to get back to low carb/keto. Things have just been too weird around here lately.

Love ideas! Post whatever you've cooked in your small space. Please and thank you.

Oh my. Now this doesn’t happen everyday but here goes.

Potato salad and a huge squash casserole. We have squash coming out of the garden like crazy.

Oh yeah. Two blueberry pies. Blueberries from our bushes.

John put 4 racks of ribs in the smoker also.

i've been living off of flavrpac asian mixed veggie stir fry https://www.davessupermarket.com/shop/fr...4689259142 have a couple types,diced up chicken or pork or nothing,pre mixed spices and maybe a bed of rice

change up the pre miexed spices changes the whole meal, louisiana mix on the vegies and something called kickin chicken on the chicken has been my fav

also got a packet from real salt for a good deal a while back that i have been using https://redmond.life/realsalt/ the garlic salt and herb salt is pretty good with trace minerals,salt is not as salty and a little sweet

steak and shrimp for me.
for family with their steak and shrimp hubby grilled some asiago cheese bread, then I made corn on the cob in the microwave for both of them.


yea I am so low carb I am a carnivore LOL

but our little kitchen can do alot tho but I still find I don't wanna cook Smile

I find the simpler I go with any cooking the happier I am....never a kitchen person so I am not into cooking.

A nice hunk of meat in my crock pot is never a bad thing. I never use my oven in the rv. I hate that thing truly. I did buy an electric skillet that can double as an oven but haven't tried it yet for making biscuits or the such for the family. Will be interesting to see how it does tho. I am more into buy dinner rolls already made and just heat them up a tad, faster for me Smile

oh and micro corn cob is simple......heat in husk and put some water in it OR de-husk and wrap corn in wet water paper towels....it steams up perfect on a few mins....either way....I de-husk and nuke wrapped in very wet paper towels....if you want fast this is it LOL

Yummo. I'm wanting to do some ribs, but I used to slow cook for 7+ hours in oven (house)...not doing that in the RV or during the summer lol

I might try them in the foodi, outside.

I want some new spices. I keep cajun seasoning on hand at all times, but I like trying new flavors too. I can't do brocolli, cauliflower, cabbage, etc. I hate that because that was my potato substitute. I was making some awesome mock twiced baked "potatoes" and "crackslaw' recipe.

Roamer,

I've went the carnivore route before, but I can't sustain it very long. I eventually need some veggies and nuts/seeds. I tried the very high fat version of keto too, but that wasn't for me either. I'm trying to get back to a simple/dirty keto so I don't really have to think about it too much. I greatly envy your willpower, because I think you're rocking it with tons of energy (as it should be). You are my inspiration! <3

The skies have been cloudy, no solar cooking going on. Too bad too. Ribs are on sale Since it is just me, cheap and easy in on the menu.

Thursday I tossed two bags of $1 meatballs from Dollar tree into a fry pan. 24 in all. Heated them up and added a $1 can of spaghetti sauce. Warm three balls and sauce up in the microwave, put of a slice of bread or toast, sprinkle with mozzarella.....

Do I know what's in the meatballs? No

Do I want to know what's in the meatballs? Not really.

Yesterday it was three salmon fillets fried in butter and oregano. Chopped up before adding a cup of white rice, Not bad but next time I get some teriyaki sauce.

Today was a nuked egg roll and Ramon. Later I made a spinach salad with a little package of the cubed chicken from WM, cheese and ranch dressing. The packages are small, cheap and just enough for a nice salad.

Do I know what's in the chicken? ...........

With most things that are cheap and easy...the less history, the better. Lol.
