Feasible electric plan?

I don't know diddly about electricity -- it's the same as magic to me.

For a van or a homemade trailer: Would it be reasonably possible to outfit a basic non-electric rig (with insulated and paneled walls), and then later  add solar by running the wiring through PVC pipe that is installed along the bottom and top of the wall panels (visible)?

yea,a purpose made grommet,rubber hose big enough for the wire to fit in,anything that will protect the wire going through the ceiling,nice gob of sealant of your choice to keep the water out,i dont worry about a wire running down the wall

Place a length of paracord or something similar in the pvc pipe and tape it or ziptie it at both ends. Then later, when you want to run the wiring, you will have a cord to attach to the new wiring and will be able to easily feed it thru the plastic pipe.
