Machaca plate
#1
I've had some cans of "Roast Beef in Beef Broth", Kirkland brand from cosco around for awhile. The other morning I was hungry for some machaca style eggs for breakfast. So I drained the broth out of the can and started cooking:

I poured about 2 tablespoons of olive oil into a medium sized frying pan and set the heat to medium.
I poured in about a quarter of a yellow onion sliced thin and 1/3 of a red pepper sliced medium. I added salt and black pepper.
and cooked until they were about 1/2 cooked.

I dumped in the beef chunks and broke them up as I stirred it all. The meat came well cooked in the can, it was very tender and broke apart easily. I cooked it until the mixture was all hot.

Then I stirred in 6 jumbo eggs that I had beaten with a fork, added more salt and pepper and stirred and flipped the mixture until the eggs were cooked.

OMG! this was the best breakfast I have eaten in ages!

Oh, I had some warmed corn tortillas to go with it. It was enough for 2 meals.

Enjoy

Oh my, Costco discontinued those cans of beef 8 or 10 years ago. Too bad. They were pretty good. Their chicken is good.
I'm not lost. I'm exploring.

Yup if he survives the night... I worked there in 2007 doing demos on that stuff then they closed it out some time after. It’s been awhile.

Ha! Just checked the "Best by" date.... 2012. That stuff stores very well !

It's been more than a few days since I ate it, no problems.

Since when did canned stuff get a best before? Isn't that the purpose of canning? My grand mother had tomatoes probably caned in the last century peaches too. If the top still slopes and it pops when you twist it eat away.

Yep, eat away. I must have a dozen or so cans left, no swelling or bulging. It figures that they discontinue something that tastes so good.

I have some canned peaches that are "several" years old. I opened one to test and the seal popped so I tried some. They were pretty brown but tasted OK. They almost fell apart they were so squishy. Think I'll throw them out.
