I've had some cans of "Roast Beef in Beef Broth", Kirkland brand from cosco around for awhile. The other morning I was hungry for some machaca style eggs for breakfast. So I drained the broth out of the can and started cooking:
I poured about 2 tablespoons of olive oil into a medium sized frying pan and set the heat to medium.
I poured in about a quarter of a yellow onion sliced thin and 1/3 of a red pepper sliced medium. I added salt and black pepper.
and cooked until they were about 1/2 cooked.
I dumped in the beef chunks and broke them up as I stirred it all. The meat came well cooked in the can, it was very tender and broke apart easily. I cooked it until the mixture was all hot.
Then I stirred in 6 jumbo eggs that I had beaten with a fork, added more salt and pepper and stirred and flipped the mixture until the eggs were cooked.
OMG! this was the best breakfast I have eaten in ages!
Oh, I had some warmed corn tortillas to go with it. It was enough for 2 meals.
