We made a really effective cooler by fitting 2 inch barn insulation foam into shape and fitting a lid down into it - best cooler ever. I also put things in smaller lunch coolers into that cooler then froze ice in gallon jugs and that worked great as long as you can replenish the ice and keeping from opening much.
Have you looked at some of the old time cooling methods? Those might work for your veggies. I’ve not tried any of those yet.
I have not looked into any of the old time cooling methods. I do know some things that work which is like the fruit vegetable storage room in my first home in South Dakota. My house was the second oldest on the street. My friend's Marilyn and Waldo's home was built in 1907. The celler was dirt floored and the storage room had heavily insulated approximately 4 inch thick walls including adding insulation on the two corner walls of the celler that were part of the support of the house. Hopefully my son has a refrigerator that's big enough that I can freeze small blocks of ice I often use 1 l flavored water bottles I feel them half full and then when I'm ready to go somewhere and one ice water to drink too I put cold water in on top of them and put them in my ice chest and I have ice water and it keeps things cool.
One thing I miss and I haven't seen since I moved down the apartment and that's my ice pick. I guess most stores down here that sell alcohol<<<<<<
