I've got to have two size iron frying pan's just for mom's buttermilk cornbread.(when I'm hungry and when I'm REALLY hungry)  I know it's sacreligious to admit.  But I use cheap walmart ceramic coated non-stik pans cause after cooking while pan is hot I can wipe all excess grease and food with one-half paper towel,  spray the pan down with white distilled vinegar and use the other half of paper towel to dry it,  sit down and still have a hot meal and the pan is ready to go for the next time.  YMMV Big Grin

I'm so glad you love that skillet Doug. Recently I picked up another old skillet like that and it has a lid. Those were for frying chicken.

Old and smooth cast iron versus newer and rough texture....

Well, I'm gonna go against everything you see and hear....I like the textured surface of the new cast iron pans. Since the porous surface holds more grease or oil or fat, whatever, I have a lot less problem with food sticking....

Just my experience and opinion and others might disagree.

Yeah, I miss Captain D's.  That area was my stomping grounds till I left Nashville in 2008.
