Pizza--keto, crustless, low carb, etc

There are quite a few methods of making "keto" or low carb pizza, so thought I'd share a few here...

Crustless Pizza
My very easy go-to that I make a lot is a crustless pizza. No set recipe. I use nonstick foil mostly, but you can use a pie plate, a throw away pie pan/container, or any other dish. The nonstick foil makes sure no cheese gets stuck anywhere. Start with a little pizza sauce in the bottom and then add any toppings you want. Bake at 400 degrees for 20-25 minutes to get the cheese brown/crispy on the edges or in an air fryer for 8-10 minutes on 370 degrees. Watch closely the first time.

Skillet Pizza
Cheese will be your crust on this one.
Here's a video, he's long winded, but you can skip to 2:30 when he starts.  I use great value pizza sauce (pretty low carb and very thin so I can use a small amount) but the Rao's he uses is good if you don't mind the price. I don't cut mine until it's set 4-5 minutes because it will crisp up when it cools a little bit.

I don't have a hand mixer, so I melt the room temp cream cheese a bit more in the microwave (20 seconds maybe), so I can get everything mixed together easier. I've made this about 3 times now, and it's very good. My plan was to try different things with this crust, like more of a taco bake sort of thing.

Fathead dough--I don't do this one anymore, but I used to a lot. It's carbier than I like because of the almond flour, but I did used to cut down on the almond flour a little.
