Black "borracho" beans over quinoa w/tomato & avocado, sprinkled w/cilantro. It was dinner
   

The beans were cooked in crockpot on solar, but could have been (& in my recent past) cooked in thermos.
The quinoa was cooked on alcohol stove, 25cc.

Thank you Kaylee & I'm gonna borrow ur phrase, too!

Cammalu: oh, it was SO good! The last avocado onboard, tho & what a way to go

The quinoa could have been thermos cooked as well & saved about 15cc of alcohol

Curried coconut (red) lentils & butternut squash over crockpot baked potato - garnished w/last tomato
Curry was cooked on alcohol stove, 30cc, but could easily have been thermos cooked @ only 15cc - but part of the enjoyment of cooking for me is smelling it the while ... the potato could also have been thermos cooked.

Red lentils & butternut squash coconut curry: 

I pan toast about 2 Tbl desiccated coconut w/about 1 tsp ea: curry powder, cumin & brown mustard seed + a pinch of red pepper flakes til fragrant
1/2 C ea: red lentils, dried butternut squash (Harmony House Foods)
About 1 C water or so
Cooked on alcohol stove (30cc) w/heat diffuser placed after water boils
You could add a small can of chicken & use the broth as part of the water, as well as garnishing w/cilantro

Heat diffuser is both ends of #10 can, stacked & binder clipped together Smile

"Madras" Lentils & Spanish Rice

1/2 C lentils (rinsed/drained)
1 Tbl dry minced onion flakes
4 pkts ketchup
1 tsp ea: butter powder, cumin & ginger powder (from an Asian market - it's grated ginger that's been dried)
pinch or 2 black pepper
1 1/2 C water
No salt! The Spanish Rice pkg has plenty

1 pkg Spanish Rice mix (I used Knorr coz it was on sale for 50¢)
Dollop of olive oil

1 Roma tomato

I made the lentils in the crockpot - holding the butter powder & cumin. Lentils could also have been made on the alcohol stove (about 30cc) or in the thermos

Cook on high 4 hrs; once the liquid is heated (about 45 min), stir in the butter powder. Add the cumin @ about 2 hrs so it doesn't get bitter

I made the Spanish Rice on the alcohol stove per pkg directions + the oil. 15cc to bring it to the boil, stirred well; added 8cc, put the simmer plate on the stove, added the pot of rice & ignited.

Stirred the lentils into the rice, diced the tomato & stirred that in

   

I took the pic @ lunch - I reheated for supper & added diced avocado garnish

You could dress up the Spanish Rice by frying a Spam single slice in the pot, dicing it, & then starting the rice (looking @ you, Kaylee)

No, the brown ones, but I did add a Tbl or 2 leftover small red beans from the nite b4
