Weird things to do with eggs

I used to make overnight cookies with egg whites that are merengue-like. Now that I have a stovetop oven of sorts (Ovenette), I might try to adapt the recipe to work in that. As for the yolks, I’ve been wanting to try the preserve them in salt thing. Apparently, they dry out and you can shred them and use like Parmesan cheese.

I’m more concerned about the overnight cookies working than the egg yolk thing. Any other ideas for egg whites? Not as a substitute for whole eggs, please. Looking for new and interesting stuff I can do with them. The odder the better.

I remember a pastry chef that would add different flavors to egg white and make some little puffs that melt in your mouth. I wish I could duplicate that one!
Compared to parenting, Cat herding is less complicated

I should try some of those in the Ovenette before it gets hot as hades here. It might be tricky keeping the temp right, but I’m game to try.

Meyer lemons are 2 for a $1.00 at the discount tent grocery at Tyson Wells, Quartzsite.

I could use a Rav lemon curd recipe this week Smile I suspect it calls for egg yolks.
