Ingredients
  • 500ml (2 cups) thickened cream
  • 1 teaspoon caster sugar
  • 1 teaspoon vanilla essence
  • 250g packet Arnott's Choc Ripple Biscuits (or any chocolate cookies)
  •  I cup brewed Coffee or any type of Alcohol you prefer like Baileys Irish cream



Method
  • Step 1 Using an electric mixer, beat cream, sugar and vanilla to firm peaks. 
  • Step 2 To assemble cake, using a spatula, spread one-third of cream mixture down the length of a platter to make the base. Starting from one end, Dip one biscuit/cookie into a cup of brewed coffee or baileys then stand the biscuit upright on its edge and spread with cream. (repeat the coffee/baileys dipping then ) Place another biscuit beside it and sandwich together. Repeat with more biscuits, coffee, baileys and cream to make a row. 
  • Step 3 Continue building the cake with biscuits and one-third of cream. Spread remaining cream over the cake to cover. Chill for 6 hours to set.
  • Then decorate with Berries prior to serving.
