Ham/Bean Soup (in honor of today's windy chilly)

1/2 C small white beans (great northern I think, but any will work) rinse, soak overnite, drain (I use the soak water to moisten dogs' food & dish washing - why waste?)
3 C water
1/4 C ea: dried carrot dices, stew blend 
1 Tbl ea: dried red/green pepper dices, tomato powder, & sun-dried julienne tomato strips, diced
1/2 Tbl ea: dried celery pieces, minced onion flakes
1 tsp dried jalapeno pieces
1 bay leaf
1 tsp Italian seasoning
3/4 tsp salt
1/2 tsp ea: basil, oregano
1/8 tsp black pepper
1 5 oz can ham or 1/4 C bacon bits or bacos (TVP)

Add water, bay leaf & beans to crockpot & turn on high.
Cook approx 3 hrs.
Add everything else Xcept salt, tomato powder & sun dried tomato. Stir.
Cook another hr or so.
Add remaining ingredients, stir well, taste & adjust seasonings & let cook another hr or so.

Serve w/crackers, savoury pancakes, corn cakes, etc

The beans + bay leaf could have been thermos cooked the nite b4, or a can of beans substituted & cooked on alcohol stove (about 20cc) - in which case, omit bay leaf
You could use dried hominy instead of the beans. More carbs and less protein but a variety in the diet.

Yes you could!
If you swap the Italian seasoning for cilantro or oregano, the carrots for dried cabbage flakes
Basil for cumin
Add a clove or 3 of garlic & a pinch or 3 of cayenne
You could call it Almost Posole

Real Posole requires cooking down those big-azz, scarey-looking dried red Anchos
